Rose petal sherbet

  • 4 red organic roses, petals removed and washed
  • 250 ml sugar
  • 315 ml sugar
  • 30 ml rose syrup
  • 30 ml verjuice or lemon juice
  • 2 litres sparkling mineral water


Place rose petals, sugar and water in saucepan and bring to the boil.
Reduce heat and simmer for 8 minutes or until a light syrup has been made.
Remove any scum as it forms.
Cool and stir in the rose syrup and verjuice.
To serve, pour the syrup into chilled glasses and top with mineral water.
