Roasted beetroot and red onion salad

  • 6
    red onions, cleaned but not peeled
  • 10
    medium-sized beets
  • 125
    balsamic vinegar
  • 75
    brown sugar
  • 125
    olive oil
  • salt and freshly ground back pepper
  • 2-3
    whole garlic bulbs, sliced through at the stem end
  • fresh baby spinach leaves


Preheat the oven. Slice the onions and beets into quarters. Place the vegetables in an oven roaster, mix well with the vinegar, sugar and olive oil, and season with salt and pepper.

Nestle the garlic bulbs among the vegetables and roast for about 25-30 minutes. Spoon over the spinach leaves and serve.
