Roast peppered beef sirloin

    beef sirloin, well ripened, at room temperature, excess fat trimmed

    olive oil

    seasoned sea salt
  • 45
    black peppercorns, crushed

Preheat the oven to 230 ºC. Pour 750 ml (3 c) boiling water into an oven roasting tin and keep warm in the oven. Brush the meat with oil, season with salt and roll in the crushed peppercorns, pressing them onto the meat. Place the rack of the oven roasting tin over the tin and place the meat on top. Oven roast uncovered for 35 minutes until underdone. Serves 8.
