Roast chicken

  • pinch cayenne pepper
  • salt
  • 2
  • chicken spice


Pat chicken dry and rub well with chicken spice. Wrap the ends of the drumsticks in aluminium foil (shiny side facing in) and press the drumsticks tightly against the body of the chicken. Cover the wings with aluminium foil. Place the chicken breast side up in a bowl and sprinkle with a little cayenne pepper. Microwave for 12 minutes on 100 per cent power and then for 13 minutes on 70 per cent power. Remove the aluminium foil and rub the chicken spice into the pale areas. Sprinkle with a little cayenne pepper and season with salt if desired. Microwave the chicken for 5-7 minutes more on 100 per cent power. Wrap the entire chicken in aluminium foil and allow to stand for 5 minutes. Serves 4.
