Red onion soup

    large red onions, halved and sliced

    vegetable stock
  • 400
    beef stock
  • 150
    dry white wine
  • 15
    fresh thyme or lemon thyme, stripped from stem

1 Heat butter in a saucepan and fry onions gently for about 5 minutes until soft. 2 Add the stock, wine and thyme and simmer for 10 minutes. 3 Season to taste with salt and freshly ground black pepper and serve with crusty bread. Serves: 4 Preparation time: 10 minutes Cooking time: 15 minutes
