Red cabbage with raisins and pine-nuts

Ingredients (10)

0.00 0 apples — peeled, cored, grated
0.00 0 butter
0.00 0 garlic — cloves, crushed
0.00 0 garam masala
0.00 0 red wine
0.00 0 brown sugar
0.00 0 salt and freshly ground black pepper

Method:

Cut the cabbage into thin strips.
Place the butter in a pan over medium heat and melt until bubbling.
Add the cabbage, grated apple, garlic and marsala and mix well.
* The apple is VERY important as it adds the acid which keeps it from turning blue.
Add the red wine, raisins and sugar and cook for about 15-20 minutes, stirring occasionally.
The cabbage should be soft.
Pine nuts: place in a little pan over medium heat and toss until slightly golden. WATCH them as they catch easily.
* Serve the cabbage with the pine nuts sprinkled over it JUST before serving otherwise they will go soggy.
