Quick fudge

  • 500
    castor sugar
  • 397
    full cream Nestlé condensed milk
  • 125
    butter or margarine
  • 5
    vanilla essence


Grease a 27 x 15 cm microwaveproof dish with butter or spray with non-stick spray. Line the dish with aluminium foil and butter or spray once more. Place the castor sugar, condensed milk and butter or margarine in a large glass bowl and microwave on high (100 per cent power) for 3 minutes. Stir and microwave for another 5 minutes. Remove the dish from the microwave oven, stir the mixture and microwave for another 6 minutes. Add the vanilla essence and beat the mixture with a wooden spoon until it thickens. Working rapidly, turn out into the prepared dish. Leave until the mixture sets, but cut into squares before it hardens completely. Makes about 55 small squares.
