Quick fresh fruitcake

  • 310
    cake flour
  • 5
    baking powder
  • pinch of salt
  • 180

  • 2
    extra large eggs
  • 4 x 250 ml summer fruit such as berries, strawberries, grapes and diced peaches
  • brown sugar
  • cream or mascarpone cheese to serve


Preheat the oven to 180 °C. Grease a 24 cm loose bottomed cake tin. Sift together the cake flour, baking powder, salt and sugar. Melt the butter and whisk in the eggs. Add to the flour mixture and stir. Spoon the batter into the greased tin. Spoon the fruit on top, sprinkle with brown sugar and bake for 1 hour or until done. Slice and serve with cream or mascarpone cheese.
