Ingredients (11)

12.00 prawns — large
250.00 g onion — finely chopped
fresh thyme
75.00 ml sunflower oil
10.00 garlic — cloves, crushed with salt
20.00 g fresh ginger — crushed
4.00 grated lemon peel — leaves combava
2.00 ml saffron
15.00 pimento peppers — choped
400.00 g tomatoes — chopped
1.00 fresh parsley

Method:

Cut heads off prawns and devein, or scrape out contents of heads and add to sauce for more flavour.
Brown onions and thyme in heated oil. Add crushed garlic and spices. Stir well. Add chopped pimentos and tomatoes. Cover and simmer for 10 minutes. Add prawns and stir well. Leave to brown.
Pour over 500 ml (2 cups) water. Stir and cover. Cook over gentle heat for 20 to 30 minutes. Before serving, sprinkle with parsley.
