Prawn phyllo stacks

  • 3
    sheets of phyllo pastry
  • butter for brushing
  • 250
    prawns, shelled and steamed
  • 1
    chilli, chopped
  • 1
    clove garlic, chopped
  • 125
    crème fraîche
  • 1
    handful Italian parsley, chopped
  • salt and freshly ground black pepper

These elegant nibbles will keep hunger pangs at bay.
Preheat the oven to 180 °C.
Brush each sheet of pastry with butter and place on top of one another.
Cut into 12 small squares and place on a baking tray.
Bake in the oven until golden. Remove and set aside.
Slice the prawns and mix in the chilli, garlic and crème fraîche. Add chopped parsley and season with salt and freshly ground black pepper.
Place a spoonful of prawn mixture on each square of pastry and serve.
