Prawn and mealie pancake filling

    prawns, drained

    fresh lemon juice

    olive oil
  • salt and freshly ground black pepper

    large onion, sliced

    small chillies, seeded and finely chopped

    tomato, peeled and finely chopped

    whole kernel corn

    cheese, grated

    prepared tortillas or pancakes


Mix the prawns with the lemon juice and olive oil, season to taste with salt and black pepper, cover and chill for 30 minutes. Heat the oil in a pan. Stir-fry the onion until tender and translucent. Add the chillies and tomato and stir-fry lightly. Stir in the prawn mixture. Heat until warmed through and stir in the cheese. Spoon the filling on top of the tortillas or pancakes, and fold over. Grill in the oven or over the coals if desired. Serve hot.
