Potato pie

    cooked leftover meat, diced
  • 1
    onion, finely chopped and sautéed in oil
  • 1
    tomato, peeled and finely chopped
  • 15
    parsley, finely chopped
  • salt and freshly ground black pepper

    boiled potatoes, mashed
  • 25
    cake flour
  • 2
    extra-large eggs, whisked
  • 3
    prepared mustard
  • little grated Cheddar cheese

Preheat the oven to 180ºC (350ºF). Spray a small ovenproof dish with non-stick spray. Combine the meat, onion and tomato. Add the parsley and season with salt and pepper to taste. Mix the mashed potato with the cake flour, eggs and mustard and add to the meat mixture. Mix well and turn into the prepared oven dish. Sprinkle with cheese and bake for about 20 minutes or until the cheese has melted and the dish is warmed through. Serves 3 - 4 with a salad.
