Potato and ham patties

    medium potatoes, peeled
  • 6
    spring onions, sliced
  • 250
    cooked ham or gammon, cut into small cubes
  • salt and freshly ground black pepper to taste

Boil potatoes whole, then set aside to cool. Grate the cold potatoes into a large bowl. Gently mix in the spring onions, ham and seasoning to taste. Heat the butter and oil in a large heavy-based frying pan. Make patties from the potato mixture by pressing it together in your hands. Place patties in the frying pan and cook over a very low heat for about 15 minutes on either side, or until golden and crisp. Serve immediately with salad.
