Potato and goat's milk cheese omelette

    olive oil
  • 4
    large eggs, beaten
  • salt and milled pepper
  • 100
    black pepper goat's milk
  • cheese, sliced
  • 150
    baby tomatoes
  • 2
    cooked potatoes, cubed and fried
  • 6
    fresh sage leaves
  • 6
    slices salami


Preheat grill. Heat oil in a 15 cm diameter frying pan. Season eggs and pour into pan. Turn heat down to very low and cook for 15 minutes, without stirring. Add cheese, tomatoes, potatoes, sage and salami. Place under grill and leave until eggs have cooked. Halve and serve.
