Potato Fritters

  • 1
    medium potato, boiled in the skin
  • 500
    raw potatoes, peeled and cut into chunks
  • 1
    large egg
  • 30

    small onion, roughly chopped

    sunflower oil, for frying

    ready-made apple sauce, to serve


1. Peel the cooked potato and cut into chunks. Place in a food processor along with a handful of the raw potato. Add the egg, breadcrumbs, onion and salt and pepper, to taste. Blend until smooth, then add the rest of the raw potato and process until smooth.
2. Heat a thin layer of oil in a non-stick frying pan over a medium heat. Fry ladlefuls of the potato mixture in hot oil until golden brown on both sides.
3. Serve as an accompaniment to the beef soup, topped with apple sauce.
