Portuguese chicken

    whole chicken
  • salt to taste

    large cloves of garlic, crushed

    chilli powder

    semi-sweet white wine


Preheat the oven to 180 ºC (350 ºF). Cut the chicken down the breast bone using kitchen scissors and spread it open so that it lies flat. Season lightly with salt. Mix the rest of the ingredients apart from the white wine and brush over the outside and inside of the chicken. Put the chicken in a large ovenproof dish and pour the white wine over it. Oven roast for about an hour until the chicken is cooked and its skin is golden brown. Turn the chicken twice during the cooking time. Put the chicken on a serving platter. Reduce the sauce or thicken with cornflour and serve with the chicken. A green salad, roast potatoes and tasty vegetables round this meal off. Serves 4.
