Pork chops with strawberry salsa

  • 4
    pork chops
  • 45
    olive oil
  • 250
    strawberries, finely chopped
  • 30
    balsamic vinegar
  • 15
    lime juice
  • small handful fresh coriander or parsley, chopped (optional)



Season the pork on both sides with salt and freshly ground black pepper.

Heat the olive oil in a nonstick frying pan and fry the meat for about four minutes on each side or until cooked through.

For the salsa:
mix the strawberries, balsamic vinegar, and lime juice together. Add the chopped coriander or flat-leaf parsley, if using.

Serve the chops and salsa with grilled asparagus and roast potatoes.
