Poached pear and Gorgonzola salad

  • 2
    star anise
  • 2
    cinnamon sticks
  • 1
    lemon, grated peel and juice

    white wine
  • 250
    castor sugar

    pears, peeled, with stalks left on
  • rocket to serve
  • 400
    gorgonzola cheese, crumbled


Place star anise, cinnamon, lemon peel and juice, honey, white wine and castor sugar in a saucepan. Bring to boil and simmer for 5 minutes to make a syrup. Add pears and simmer for 20 minutes, or until a skewer can easily be inserted through centre of pears. Remove pears with a slotted spoon and allow to cool. Arrange rocket on plates and place a pear (whole or halved) on each. Sprinkle with cheese and drizzle a little syrup over.
