Plum and almond tart

    mascarpone cheese
  • 1
    large egg yolk
  • 2
    ground cinnamon
  • 65
    castor sugar
  • 250
    puff pastry
  • 40
    almonds, slivered and toasted
  • 8
    plums, halved, stoned and thinly sliced
  • 30
    pine nuts, toasted
  • whipped cream, to serve (optional)

1. Combine mascarpone, egg yolk, cinnamon and 15 ml sugar and mix well. 2. Roll out pastry, lay in a loose-bottomed tart tin and prick all over. Pour mascarpone mixture and nuts over pastry. 3. Top with closely overlapping slices of plum and scatter with pine nuts. Bake at 220 ºC for 12 to 15 minutes or until pastry is puffed and golden. Serve hot or cold, topped with remaining castor sugar and whipped cream.
