Pizza bases

Preheat the oven to 200 ºC. Butter a large baking sheet or spray with non-stick spray and dust with a little flour. Sift the cake flour, salt and instant yeast together in a mixing bowl. Add the butter and rub in until well blended. Add the hot water a little at a time, mixing well until a stiff dough is formed. Knead the dough until it's smooth and elastic and no longer sticks to your hands (an electric mixer with a dough hook also works well). Divide the dough into 9-10 balls and flatten with your hands or roll into circles with a rolling pin. Place on the prepared baking sheet and leave to rise in a warm place until double in size. Spread with tomato sauce, cover with the kids' favourite toppings and sprinkle with dried herbs such as origanum or thyme. Bake for 15-20 minutes until the cheese has melted and the dough is cooked through. Makes about 10 fairly small pizzas.
