Pink peppercorn bread sticks

    white bread flour

    instant yeast
  • 275
    warm water
  • 15
    dried pink peppercorns, crushed
  • 10
    dried basil
  • 45
    olive oil
  • 30
    coarse salt


10‑12 minutes
Sift flour into bowl, add salt and yeast. Make a well in the centre and add water. Mix to combine, then add crushed peppercorns, basil and olive oil. Mix to form a smooth dough. Knead dough for 5 minutes, until soft and elastic, then place in a bowl and cover with clingwrap and leave to rise until doubled in size. Place the dough on a lightly floured surface and knead again for two minutes. Divide dough into 25 balls and roll out to form thin stick shapes Place on a greased baking sheet. Cover with a dish cloth and leave to rise again until doubled in size. Brush lightly with a little extra olive oil and sprinkle with coarse salt. Bake in a preheated 220 176;C oven for 10-12 minutes and cool on wire rack.
