Pineapple sweet potatoes with orange sauce

    sweet potatoes
  • pinch salt
  • 1
    medium-sized pineapple, skinned and grated
  • 25
  • 125
    brown sugar
  • 250
    fresh orange juice


Preheat the oven to 180 ºC and spray an ovenproof dish with non-stick spray or butter lightly. Peel and slice the potatoes. Cook rapidly in lightly salted water until just tender, drain and arrange in layers in the prepared dish. Bring the remaining ingredients to the boil and pour over the sweet potatoes. Dot with butter and bake for 25 minutes. Leave to cool for a few minutes before serving. Serves 3-4.
