Peacan-nut chocolate cake

    soft butter
  • 250
    treacle sugar
  • 4
    lager eggs
  • 460
    cake flour
  • 15
    baking powder
  • 200
    peacan nuts
  • 250
    dark chocolate


1 Beat the butter and treacle sugar until pale and fluffy. Add the eggs one at a time, beating lightly after each addition. Stir in the prepared coffee.
2 Sift in the flour and baking powder. Fold in most of the pecan nuts and chocolate, reserving a little for sprinkling on top. 3 Line and grease a 23cm spring form tin. Spoon the batter into the tin and smooth with the back of a spoon. Scatter the reserved pecan nuts and chocolate over the top. Bake in a preheated oven for 30 to 35 minutes or until a skewer comes out clean. Remove from the oven and leave to cool in the cake tin. Serve slightly warm
