Pasta with mealies and courgettes

  • 200
    shell noodles
  • oil
  • 1
    large onion, finely chopped
  • 1
    red pepper, diced
  • 8
    courgettes, diced
  • 15
    chilli paste
  • 375
    whole kernel sweetcorn
  • 125
    sour cream
  • 15
    lemon juice
  • salt and freshly ground black pepper


Cook the shell noodles in rapidly boiling salted water until done, but still firm. Drain and set aside. Heat the oil in a heavy-based saucepan and fry the onion until translucent. Add the red pepper and courgettes and stir-fry until tender. Stir in the chilli paste and mealies. Stir in the sour cream and lemon juice and season with salt and black pepper to taste. Add the noodles and mix. Serve hot.
