Ingredients (9)

75.00 ml water
75.00 ml milk
salt — just a pinch
50.00 ml butter — cut into pieces
115.00 ml flour — plain
3.00 eggs — large
100.00 ml parmesan cheese — finely grated
25.00 ml fresh coriander — chopped
black pepper — freshly ground

Method:

Bring water, milk, salt and butter to the boil in a saucepan. Add the flour and beat with a wooden spoon.
Cook until the mixture leaves the side of the pan and forms a ball (as for choux pastry).
Remove from the heat and cool slightly. Beat in the eggs one at a time and mix well.
Stir in the remaining ingredients, and spoon the pastry to form little rounds on a damp baking sheet.
Bake in a preheated oven for 25 to 30 minutes, until the puffs are well puffed up, crisp and golden.
Serve with Gazpacho soup with Parmesan and coriander puffs (see recipe).
