Pan-roasted salmon with avocado, soya and ginger dressing and salmon roe

    Norwegian salmon steaks or fillets, skinned

    olive oil
  • 15
  • salt and freshly ground black pepper

    large avocado, diced
  • 125
    soya sauce
  • 2
    cloves garlic, peeled and crushed
  • 1
    stem of ginger, finely chopped
  • 60
    mirin (Japanese rice wine vinegar)
  • 60
    salmon roe
  • fresh coriander to serve


Season salmon with salt and pepper. In a large frying pan, melt butter and add olive oil. Over medium heat, fry salmon, about 10 minutes for steaks, a little less for fillets, turning once. Combine soya, garlic, ginger and mirin. Top each piece of salmon with avocado. Spoon soya mix over. Toss over the salmon roe. Garnish with coriander.
