Pan pizza

  • 500
    self-raising flour
  • 5
  • 20
  • 7
    instant dried yeast
  • 30
  • 300
    lukewarm water
  • basil pesto
  • anchovies
  • fried bacon
  • salami
  • Peppadews
  • gherkins
  • canned pineapple
  • mozzarella cheese


Combine the self-raising flour, salt and sugar and sprinkle the instant yeast on top.
Pour the oil and lukewarm water over the flour mixture and mix to form a stiff dough.
Knead until smooth and elastic and the dough no longer sticks to your hands.
Cover and leave to rise until double in volume.
Knock down and shape the dough into a large flat circle.
Spray the griddle side of the lid of a Superpotjie with non-stick spray and place the dough on top.
Leave to rise again.
Place the lid on a three-legged stand or a grid and heat over the fire until the dough is just done.
Turn so the browned side is on top.
Spread with a layer of basil pesto and arrange the topping ingredients on top.
Sprinkle with cubes of mozzarella cheese.
Place the upturned pot or a lid over the pizza and place a few coals on top.
Heat until the cheese has melted and the topping ingredients are heated through.
