Pan-fried saddle chops

  • 12
    lamb saddle chops
  • salt
  • pepper
  • 120
    cake flour
  • 3
    eggs, beaten
  • oil for frying


Lightly season the chops with salt and pepper. Blend the cake flour and eggs to form a smooth batter. Dip the meat in the batter and fry in the heated oil until browned and cooked through. Serve with potato chips and a tomato salad. Serves 8.
