Pan-fried green asparagus with lemon and parmesan shavings

  • 6
    asparagus spears
  • butter
  • lemon juice
  • thyme leaves
  • balsamic vinegar
  • olive oil
  • Parmesan shavings


Use about 6 asparagus spears per person. Trim the hard ends of the asparagus. Heat enough butter in a pan and stir-fry the asparagus with a little lemon juice and thyme leaves until just done. (You can even stir-fry slices of fresh lemon with the asparagus.) Remove from the heat and place on a white plate. Season with balsamic vinegar and a few drops of olive oil. Scatter with Parmesan shavings (cut with a potato peeler), Dot with readymade basil pesto and serve. Serves 1.
