Ingredients (15)

SAUCE
45.00 g butter
2.00 onion — sliced
1.00 garlic — cloves, crushed
30.00 ml flour
200.00 ml stock — beef
45.00 ml port
50.00 ml sultanas — soaked in warm water
10.00 ml green peppercorns
10.00 ml Dijon mustard
100.00 ml cream
salt and freshly ground black pepper — to taste

4.00 ostrich — fillets
30.00 ml oil
30.00 ml butter

Method:

SAUCE: Melt the butter in a saucepan and sauté the onion and garlic until soft. Stir in the flour and cook for 1 minute. add the stock and port gradually, stirring constantly. Cook until sauce has thickened, then add the sultanas, peppercorns, mustard, cream and seasoning. Continue to cook over a gentle heat for 1 minute, then remove from the heat, cover and set aside. STEAK: Heat the butter and oil together in a large, heavy-based frying pan. Fry the steaks over a high heat for 2-3 minutes on each side. Serve immediately with the sauce.
