18.00 prawns
300.00 g noodles — vermicelli
0.00 oil — for deep frying
6.00 lemongrass — trimmed
MARINADE
100.00 ml verjuice
60.00 ml oil — grapeseed
50.00 ml fresh chillies — 573
5.00 ml salt
5.00 ml black pepper — freshly ground
10.00 ml coriander — ground
10.00 ml fresh mint — finely chopped
DIP
140.00 ml sugar
150.00 ml lemon juice
120.00 ml fish sauce
160.00 ml verjuice
50.00 ml garlic — cloves, crushed
100.00 ml sweet chilli sauce

Method:

Remove the prawn shells and alimentary canals, keeping the tails intact.
Blend the marinade ingredients and marinate the prawns in the mixture for three hours.
Soak the vermicelli in hot water until soft and wrap around the prawns.
Deep-fry the prawns in hot oil until golden brown and thread three prawns onto each lemongrass stalk.
Whisk together all the dipping ingredients and serve in small bowls with the prawns.
