Open mushroom and celery sandwich

  • 4
    slices white bread, toasted on one side
  • butter

    stalks celery, chopped
  • 100
    button mushrooms, sliced
  • 5
    cake flour
  • butter
  • 100
  • salt
  • pepper
  • 4
    small tomatoes, cut into wedges
  • Cheddar cheese, grated


Turn on the grill and butter a baking sheet. Lightly butter the untoasted side of each slice of bread. Place on the baking sheet, toasted side facing down. Sauté the celery and mushrooms in the butter until pale brown. Add the cake flour and cook, stirring continuously. Remove from the heat and stir in the cream. Season to taste with salt and pepper. Divide between the four slices of bread. Arrange the tomato wedges on top of each slice of bread and sprinkle with a thick layer of Cheddar cheese. Grill until the cheese has melted and is golden brown. Serve immediately.
