Open chicken sandwich

  • 2
    chicken breast fillets
  • 5
    olive oil
  • salt and freshly ground black pepper
  • 30
    greek yoghurt
  • 15
    grated parmesan cheese
  • 5
    lemon juice
  • 5
    capers, chopped
  • 1
    small garlic clove, finely chopped
  • 15
    cold water
  • 2
    thick slices of bread
  • a handful of rocket
  • parmesan cheese shavings to serve


Heat a griddle pan over medium heat. Brush the chicken breast fillets with the oil and season with salt and pepper. Fry the chicken breasts for about 7 minutes on each side and remove from the pan. Mix the yoghurt, grated cheese, lemon juice, capers, garlic and water and season with salt and pepper to taste. Toast the bread and slice the chicken breasts diagonally. Arrange the rocket on the toast, followed by the chicken slices. Spoon the dressing over and top with Parmesan cheese shavings.
