FILLING
1.00 Litres milk
70.00 g flour — cake
30.00 ml cornflour
80.00 g sugar
salt — pinch
6.00 eggs — seperated
125.00 g butter
5.00 ml vanilla — essence

Method:

Preheat the oven to 200 ºC (400 ºF). Line three 24 cm pie dishes with the flaky pastry. Blend 125 ml of the milk with cake flour, cornflour, sugar and salt. Bring the remaining milk to the boil. Add a little of the heated milk to the flour paste and blend well. Add the flour paste to the remaining milk and bring to the boil while stirring continuously. Simmer for a few minutes. Remove from the heat. Beat the egg yolks until light and add to the milk mixture. Also add the butter and mix well. Beat the egg whites until stiff and fold into the mixture. Add the vanilla essence and spoon the mixture into the pie dishes. Bake for about 30 minutes or until the filling is golden brown. Reduce the heat to 180 ºC (350 ºF) after the first 10 minutes.
Makes 3 milk tarts.
