Nut balls

  • 200
    ground almonds
  • 335
    icing sugar
  • 2
    vanilla essence
  • 2
    almond essence
  • 1
    egg white, lightly beaten
  • 100
    pistachios or walnuts, coarsely chopped
  • 24
    dried apricots, finely chopped
  • icing sugar for rolling


Preheat the oven to 180 ºC. Grease a baking sheet or spray with non-stick spray. Mix the almonds and icing sugar. Add the vanilla and almond essences and the egg white and mix well. Add the pistachios and apricots and mix. Shape the mixture into balls and bake for about 15 minutes or until golden brown. (The balls will spread slightly.) Reshape with two teaspoons and roll in icing sugar while still warm. Makes about 24 balls.
