Noodles with tuna

    uncooked noodles

    onion, finely chopped

    cloves garlic, crushed

    tomatoes, skinned and diced

    shredded tuna in brine

  • few drops Tabasco sauce (optional)

    Cheddar cheese, grated

    chopped fresh parsley


Preheat the oven to 180 ºC (350 ºF). Grease an ovenproof dish. Cook the noodles in rapidly boiling salted water. Drain and set aside. Sauté the onion and garlic in a little oil until soft. Add the diced tomato and simmer until the mixture forms a purée. Add the tuna and a little of its brine. Add the noodles, mayonnaise and chutney, blend and season with salt, black pepper, nutmeg and Tabasco sauce. Mix well and spoon into the prepared dish. Combine the Cheddar cheese and parsley and sprinkle on top. Bake for about 20-30 minutes or until the cheese has melted and the dish is heated through. Serve with a salad. Serves 4.
