Nests of potato, leek and Parmesan

  • 4
    potatoes, peeled
  • 2
    baby marrows, washed
  • 2
    leeks, washed
  • 125
    Parmesan, grated
  • olive oil
  • salt, to taste


Preheat oven to 180 °C.
Make shavings of potatoes and baby marrows with a potato peeler.
Keep them in water while you cut the leeks into thin slices.
Make piles of potato, baby marrow and leeks on a baking tray.
Top with Parmesan and give each one a drizzle of oil and a sprinkle of salt.
Bake for 30 to 45 minutes until golden brown and the edges of the potato go crispy.
Serve as a side dish to chicken and fish.
