Morogo, carrot and red pepper stir-fry

    onions, sliced
  • 1
    large carrot, thinly sliced into strips
  • 1
    red pepper, sliced into strips
  • 6
    rashers bacon, chopped
  • 1
    lemon, grated peel
  • 1
    bunch spinach, thinly sliced
  • salt and cayenne pepper to taste
  • hard-boiled eggs, quartered (optional)


Heat oil and sauté onion, carrot, red pepper and bacon until soft. Add lemon rind, spinach and seasoning. Stir-fry to mix. Cover and cook for 15 minutes, stirring occasionally. If desired, garnish with hard-boiled eggs and serve warm with pap.
