Mixed garlic and lemon beans

    fresh green beans
  • 7
    olive oil
  • 2
    cloves garlic, thinly sliced
  • 400
    canned butterbeans, rinsed and drained
  • 15
    lemon juice and peel of half a lemon
  • 30
    xrispy onion bits (fried in oil until crispy, optional)
  • salt and milled black pepper


15 minutes
Cook beans in rapidly boiling salted water for five minutes, till just cooked but still crunchy and bright green.
Drain and cover to keep warm.
Peel the lemon with a potato peeler and then use a sharp knife to slice the peel into thin strips.
Heat olive oil in a large pan and sauté garlic over a low heat for a minute.
Add butterbeans, lemon peel and juice, salt, pepper and cooked beans to pan.
Cook to heat through, about five minutes, shaking the pan to combine flavours.
Transfer to a warm bowl and sprinkle the crispy onion bits over the beans.
