Meringues with cream and fruit

  • 350
    fresh pineapple or any other fresh fruit of your choice
  • 8
    small, readymade meringues
  • 125
    (or more) double thick cream
  • icing sugar, to dust


5 to 10 minutes
Peel the pineapple and cut into bit-sized pieces.
Place the meringues in serving dishes.
Place the fruit around the meringue and top with a large spoonful of cream.
Dust with icing sugar and serve immediately.

Make your own meringues or buy them from the supermarket.
If you are expecting guests, buy meringue baskets and fill them with fruit and cream.
They are a little more expensive but they look more elegant.
Fry sliced bananas in a little butter and spoon them over the meringues.
Drizzle each portion with melted dark chocolate and serve at once.
