Ingredients (9)

SALAD DRESSING
30.00 ml vinegar — white wine
60.00 ml walnuts — oil or sunflower oil
60.00 ml fresh chillies — 573
SALAD
3.00 pears — peeled, cored
1.00 lemon — juice only
700.00 g winter melon — sliced
125.00 g blue cheese — crumbled
25.00 g walnuts — toasted, chopped
sea salt and freshly ground black pepper

Method:

Shake the salad dressing ingredients together in a screw-top jar and set aside. Slice the pears thinly and sprinkle with the lemon juice. Arrange the pear and melon slices, blue cheese and nuts on a serving platter or four individual plates and moisten with the salad dressing. Season with salt and black pepper.
Serves 4.
