Medley of mushrooms

    olive oil
  • 15
    mustard seeds
  • 7
    chilli flakes
  • 2
    cloves garlic, crushed
  • 4
    large black mushrooms
  • 40
    dried porcini, reconstituted in
  • 125
    boiling water
  • 125
    baby mushrooms
  • 10
    whole grain mustard
  • 30
    medium cream sherry
  • 6
    oyster mushrooms
  • handful parsley or basil, roughly chopped


Heat oil in a pan and add mustard seeds. When the seeds begin to pop, toss in the chilli flakes, garlic and black mushrooms. Stir-fry for about 3 minutes. Add porcini mushrooms (and liquid), baby mushrooms and mustard. Cook over a medium heat for about 6 minutes. Add sherry and cook until mushrooms are soft. Add oyster mushrooms and cook over a high heat for about 4 minutes. Scatter with fresh herbs and serve as a side dish, on top of mashed potato, pasta or couscous, or toasted Italian bread.
