Mediterranean vegetables

    red pepper, coarsely chopped
  • 1
    yellow pepper, coarsely chopped
  • 1
    medium onion, quartered
  • 1
    baby marrow thinly sliced
  • 2
    potatoes, cooked and sliced
  • 125
    vegetable stock
  • salt and freshly ground black pepper
  • 45
    olive or sunflower oil


1. In a suitable microwave dish, place all vegetables, seasoning and stock. Microwave on HIGH for 5 minutes or until cooked through. 2. If using a convection oven, place vegetables on a roasting pan, drizzle with olive oil and grill until slightly brown or grill in ordinary oven. CONVECTION OVEN: Place on a wire rack in a preheated oven at convection 200 ºC for 10 minutes.
