Marshmallow puddings

  • 250
    marshmallows, chopped
  • 250
    fresh orange juice
  • 250
    fresh cream


Spray an 18 x 18 cm pie dish with non-stick spray. Place the marshmallows in a saucepan with the orange juice. Melt the marshmallows over low heat while stirring continuously. The mixture must not come to the boil. Remove from the heat and cool slightly. Whip the cream until stiff and fold into the marshmallow mixture. Pour into the prepared dish and refrigerate until set. Serve with evaporated milk, custard or ice cream. Serves 4.
