Marinated potato salad with feta

    baby potatoes, scrubbed clean
  • 2
    rounds feta cheese
  • 250
    cherry tomatoes
  • 1
    spring onion, chopped
  • 1
    red onion, thinly sliced
  • of a medium-sized cucumber, diced
  • handful watercress (optional)
  • 65
    olive oil
  • 30
    balsamic vinegar
  • 30
    lemon juice
  • honey or sugar to taste

Boil the potatoes in lightly salted water until tender and drain. Cut the feta cheese into small squares and add to the potatoes. Quarter the cherry tomatoes and add to the potatoes along with the spring onion, onion, cucumber and watercress. Blend the ingredients for the salad dressing and pour over the salad. Mix gently, cover and marinate for a few hours before serving. Serve cold. Serves 4-6.
