Marinated potato salad

  • 1
    onion, chopped

    cooked, peeled potatoes, sliced
  • large clove garlic, crushed
  • 100
    Cheddar cheese, grated
  • salt and pepper to taste

    caraway seed
  • 75
    olive oil
  • 75
    grape vinegar
  • 30
    chopped parsley


Pour a little boiling water over the onion and leave for a while. Drain and rinse under cold water. Arrange layers of potato, onion, garlic and the grated Cheddar cheese in a bowl with a tight-fitting lid. Sprinkle each layer of potato with a little salt and pepper and caraway seed. Blend the olive oil and grape vinegar and pour on top. Sprinkle with chopped parsley, cover and leave for a few hours, even overnight, to allow the flavours to blend. Turn the dish a few times to mix the oil and vinegar. Serves 4-6.
