  • 2
    kg
    boned, butterflied leg of lamb
  • 45
    ml
    green peppercorns (use more if desired)
  • 4
    cloves garlic
  • 250
    ml
    soy sauce
  • 1
    bunch fresh mint
 

Method

 
Wipe lamb with a damp cloth and place in a roasting pan. Liquidise remaining ingredients together, pour over lamb and marinate overnight. Roast lamb in a preheated 180 ºC oven for about 1 hour or until done to your liking.
