Marinated asparagus

  • 500
    white wine vinegar
  • 500
  • 2
    bunches asparagus, washed and trimmed
  • 3
    cloves garlic, peeled and halved
  • a few sprigs oregano
  • salt to taste
  • 1
    olive oil


In a large saucepan, bring vinegar and water to the boil. Add asparagus and bring to the boil again. Remove asparagus with tongs and drain well on kitchen paper. Place in a large sterilised jar and add remaining ingredients. Cover and store for at least a month. Serve with toast and fresh green salad. Makes 1 large jar.
