Mango fool

    mangoes, diced
  • 1
    lemon, rind julienned, and juice
  • 4
    cardamom pods
  • 60
    treacle sugar (or more to taste)

    Nestlé Ideal Evaporated Milk
  • 1
    large mango, to serve


1. Blend the mango and lemon juice in a food processor, or mash and sieve together. Blanch lemon rind in boiling water for one minute. Drain, refresh and reserve. 2. Slit cardamom pods and extract seeds. Crush to powder with a pestle and mortar. Add to mango mixture with 45 ml sugar. Process together with evaporated milk until smooth, or whip evaporated milk and fold into mixture. Add extra sugar to taste. 3. Divide between six glasses, ramekins or cups and chill overnight to thicken. 4. Just before serving, sprinkle with a little more sugar. Top with a quarter of the remaining mango, diced finely, and rind of lemon. Slice mango and serve alongside.
