Mango chicken salad

    mango purée
  • 30
    lemon juice
  • 10
    light soy sauce
  • 4
    chicken breast fillets, cut into strips
  • 60
    rocket leaves
  • 125
    ricotta cheese
  • 1
    mango, sliced into chunks
  • salt and freshly ground pepper

1. Heat the mango purée, lemon juice and soy sauce in a saucepan. 2. Add chicken strips and allow to simmer gently for four to five minutes until chicken is cooked. 3. Arrange the rocket leaves on four plates and scatter the chicken, ricotta and mango pieces over them. 4. Mix remaining sauce from the pan with 30 ml warm water. Drizzle over the salad and season to taste with salt and freshly ground pepper.
